Banana and Chocolate Chip Muffins

This really simple recipe makes a perfect busy weekday treat, making use of past it bananas, whilst giving a little chocolate fix.



What you will need:
100g Butter
2 Eggs
175g Caster sugar
225g Self-raising flour
1 tsp Baking powder
3 tbsp Milk
2 Bananas- very ripe (mashed)
150g Dark chocolate (plus a little extra to melt for the top- optional)
Oven preheated to 180C (Gas mark 4)
Muffin tin lined with cases

Simply mix the butter, eggs, sugar, flour, baking powder, milk, and bananas into a bowl and beat together until combined. Once smooth add the chocolate chunks. When the chocolate is mixed evenly throughout the mixture, spoon into the cases (splits perfectly between 12). Bake for 25 minutes then set aside to cool. If you like you can drizzle some melted chocolate once they've cooled.
They are so quick and easy to make, they simply cannot go wrong (unless you left them in the oven for an hour and burnt them, but don't do that..)
