A standard chocolate cupcake, with butter icing and an orange curd. The light butter icing with the rich chocolate and refreshing orange curd really make for a delicious combination, these went down very well with all who tried them.
What you will need:
175g Caster sugar
200g Self-raising flour
2 tbsp Cocoa powder
100g Dark chocolate (plus extra to decorate)
400g Icing sugar
1 tbsp milk
Zest and Juice of 1 Orange
Juice of half a Lemon
40g Caster sugar
Oven preheated to 170C
Muffin Tin lined with cases (makes 12)
Combine the ingredients in the same was as the Black Forest Cupcakes
For the butter icing, mix the butter until smooth and gradually add the icing sugar. Add some milk if it becomes too thick. One the cupcakes have cooled, using a palette knife smooth it over the cupcake.
For the orange curd, put the zest, juice, caster sugar and eggs in a glass bowl and whisk together. Cut the butter into cubes and add to the mixture. Place the bowl over a pan of simmering water whisking now and then until it thickens. Then remove from pan to cool.
Once the curd has cooled it can be drizzled over or swirled into the icing, then drizzle some melted dark chocolate to serve.
