Working Lunch: Chunky Vegetable & Bean Soup

Soup is the perfect winter lunch, it's super filling and full of goodness. I want to be healthier etc. new year new me yada yada. This soup left me so much more satisfied this week and I didn't snack during the afternoon at all. So here's my recipe, which you can make on the weekend and it will see you through the working week, effortless.

What you will need:
1x Onion, chopped
2x Cloves Garlic, chopped
2x Carrots, chopped
4x Sticks Celery, chopped
1x Large Potato, chopped
1x Tbsp Tomato Puree
4x Large Tomatoes, chopped
1x Cup Water
Black Pepper
Chilli Powder
Worcestershire Sauce
1x Pint Vegetable Stock
1x Tin Mixed Beans, drained
2x Large Handfuls Spinach

Heat some olive oil in a large saucepan over a medium heat, add the chopped onions and cook for a couple of minutes to soften, stir in the garlic and cook for another minute or so.

Stir in the carrots, celery, potato, tomato puree, tomatoes and water, and bring to a light summer. Season with the black pepper (no salt because vegetable stock contains enough!), chilli powder and Worcestershire sauce.

Reduce the heat and add the vegetable stock and mixed beans, and simmer for around 30 minutes (until the carrots are soft). Towards the end, add the spinach and stir until it is wilted.


Then leave to cool before putting into your storage container, a large plastic tub will do. You will comfortably get 5 portions out of this recipe.

There you have it, the perfect winter working lunch. As it's chunky it really fills you up, normally I like to have some bread with soup but you don't need it at all with this, which is great as that's what i was trying to avoid!
