Valentines Day Rocky Road

Valentines Day, if you're in a relationship you're pressured to be romantic when actually you just want a Bhuna and Biryani on the sofa. If you're single.. well.. it's just like any other day, no one loves you then either (kidding obvs, I love you). Whatever your status, there's always CHOCOLATE!!

Whether you're spending Valentines Day with a special someone, your friends, or by yourself you're sure to be satisfied by this Rocky Road if nothing else satisfies you.. if you catch my drift..

After my Corner Shop Rocky Road was such a hit that I felt I had to come back with a new all singing all dancing romantic variation. Health freaks look away now.

What you will need:
400g Dark Chocolate
3 tbsp Golden Syrup
100g Butter
200g Digestive Biscuits
200g Marshmallows
4 x Rolos
100g Lip Sweets
100g White Chocolate

Extras: A sprinkling of Valentines M&M's and Dried Rose Petals to decorate

Kick things off by breaking up the digestive biscuits, rough, not too small, just how I like my.. anyway.. Add these to a large mixing bowl.

Depending on what marshmallows you choose, I chose big fat juicy ones - just like.. mind out of the gutter PLEASE!! ...you'll want to cut them up a bit, but if you opt for little ones (it's not all about size.. little ones can do an equally good job) obviously you wouldn't. Add these to the broken up biccies.

Add your Lips and also your Rolos, which on a side note are VERY difficult to come by these days.. if you follow me on twitter, you may have seen my whole saga.. I found some in the end, but I promise, they're worth the effort to track down when you bite into that gooey caramel mmmmmm.

Now you'll need to melt the dark chocolate in a glass bowl over simmering water. As you wait for it to melt, stirring now and then, melt the butter and the golden syrup in a small pan. Once the chocolate has melted, and the butter and syrup are combined, gradually add the butter and syrup mixture to the chocolate, stirring as you do so.

In a deep rectangular baking tray lined with greaseproof paper, spread some of the chocolate mixture over the bottom. Pour the rest of chocolate into the bowl of biscuits, marshmallows, and sweets and treats and mix until it's all covered. Spread evenly over in the baking tray.

Now melt the white chocolate and drizzle over the top. To decorate sprinkle with M&M's, edible flowers, valentines sprinkles, hearts etc whatever you fancy or perhaps your lovers favourite.. Refrigerate until solid. Cut it up and tuck in!

    1. Yes! Do it! Smash up the mini eggs a bit and sprinkle them on - perfection!!! I was thinking of doing another Eastery rocky road, but I've already got two rocky road recipes? Can you get bored of rocky road? Hm naa haha.
